2 egg yolks
3 cloves garlic, crushed
4 tsp lime juice
1/2 cup vegetable oil
1/2 cup olive oil
1/4 cup coriander leaves, chopped
salt & white pepper
Place egg yolks in bowl, add garlic & 1/2 lime juice. Whisk until light & creamy.
Start adding oil, a teaspoon at a time, whisking continuously.
Increase flow of oil added as aioli thickens.
Add remainder of lime juice when all oil has been added (Up to this stage can be done in food processor)
Fold through coriander & season to taste.
