4 mangoes
3/4 cup port
2 large onions, chopped
170g (1 cup) chopped raisins
2 tsp grated fresh ginger
2 small red chillies, finely chopped
2 cups sugar
3 cups brown vinegar
2 tsp mustard seeds
Peel & roughly chop mangoes.
Combine mangoes in large pan with remaining ingredients, stir over heat until sugar is dissolved.
Bring to boil, reduce heat, simmer uncovered about 1-1/2 hours until thick.
Stir occasionally near end of cooking time.
Pour into hot jars, cool & seal.
(Makes about 5 cups)
