1 kg kiwifruit
3 onions
2 bananas
1 cup raisins
2 Tbs chopped crystallised ginger
2 tsp salt
1 cup brown sugar
1 tsp ground ginger
1/4 tsp cayenne pepper
1 cup white wine vinegar
juice of 2 lemons
Peel & slice kiwifruit, finely chop onions & slice bananas. Combine in a large pan with remaining ingredients & bring to boil, stirring often.
Genly boil until soft & thick, about 1-1/2 hours, stirring occasionally.
Allow to cool then spoon into clean jars & cover.
