125g butter
3/4 cup sugar
2 eggs
1-1/2 cups flour
1-1/2 tsp baking powder
1/2 cup milk
1 tbs grated lemon rind
Turn oven to 180 degC. Grease 20cm tin. Line base with wax paper. Beat butter & sugar till smooth & creamy. Add eggs & lemon rind. Beat well. Sift in flour & baking powder and mix well with milk. Pour into tin. Bake 30-35 mins.
Icing: Mix 1-1/2 cups icing sugar, 1 Tbs butter, squeeze lemon juice & grated rind. Spread over cake.
