1 kg apricots
1/2 cup water
1/4 cup lemon juice
1 kg sugar
Wash apricots, halve & remove stones.
Combine apricots, water & lemon juice in pan, bring to boil, simmer 15 mins until apricots are tender.
Add sugar, stir constantly until dissolved.
Bring to boil & boil uncovered without stirring approx 30 mins. Stand 5 minutes before pouring into jars.
Seal when cold.
(Makes about 5 cups)
