75g butter
1-1/4 cups sugar
2 tsp grated lemon rind
3 eggs
juice from 4 lemons
Put 3 clean jars in oven at 100 degC 10 mins.
Heat water in base of double boiler, bring to boil, then turn to low.
Put butter in top half, when melted add sugar, lemon juice & rind. Stir well. Lightly whisk eggs & add stirring all the time.
Keep stirring (about 7 minutes) until mixture thickens.
Pour into jars, seal & cool.
