2 eggs, lightly beaten with a fork
450g tin kernal corn, drained
1 celery stick, finely chopped
70g smoked ham, finely chopped
1/2 tsp cajun seasoning
3/4 cup self raising flour
1/2 cup milk (approx)
1/2 cup oil for frying
Heat a few tablespoons of oil in the frying pan.
Mix the other ingredients together using only enough milk to form a smooth batter.
Spoon small tablespoonsof the batter into the pan.
Fry each side until golden brown & puffed. Drain on paper towels.
To serve: Arrange 2-3 fritters on warmed plates & garnish with greens & smoked ham, drizzle with hollandaise sauce.
