1-1/4 hot apple & cinnamon tea (or tea of choice)
200g dried apricots, roughly chopped
75g butter
1 cup raw sugar
1 Tbs golden syrup
1 egg
1 tsp vanilla
1-1/2 cup self raising flour
1/4 tsp salt
1 tsp cinnamon
Pour hot tea over apricots & leave to cool.
Cream butter, sugar & syrup until pale.
Add egg & vanilla & beat well.
Stir in sifted flour, salt & cinnamon.
Pour into greased & floured 20cm ring tin.
Bake 170 degC 30 mins.
