1-1/4 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 cup sugar
125g dates
1/2 cup oil
1-1/2 cups buttermilk
1 egg, lightly beaten
1-3/4 cups unprocessed bran
Sift flour, soda, cinnamon & sugar.
Stir in bran & finely chopped dates.
Make well in centre, add oil, buttermilk & egg.
Mix until just combined, cover & refrigerate overnight.
Next day drop spoonfuls into muffin tins.
Bake moderate hot oven 20 minutes.
