150g dried apricots, chopped
1 cup orange juice
75g butter, cubed
3/4 cup sugar
1 tsp vanilla essence
1 tsp baking soda
2 cups flour
1 tsp baking powder
100g chocolate chips or large chocolate chips
70g hazelnuts, lightly roasted, skinned & chopped
Preheat oven to 175 degC.
Grease & line 22cm x 12cm loaf tin.
Place dried apricots & orange juice in large pan, bring to boil.
Remove from heat & add butter, sugar & vanilla.
Mix & cool 5 minutes then stir in baking soda.
When cooled add sifted flour & baking powder & stir until just combined.
Fold in chocolate & nuts.
Pour into tin & bake 50 mins.
