250g butter
1/2 cup castor sugar
1 egg
1 Tbs golden syrup
2-1/2 cups flour
1-1/2 tsp baking powder
1 tsp ground ginger
pinch salt
Beat butter & sugar together. Add egg & golden syrup & beat well.
Fold in sifted flour, ginger, baking powder & salt.
Put mixture into piping bag and pipe into long strips on a tray or roll into balls & flatten with a fork.
Bake 180 degC 10 minutes.
When cold join with ginger cream.
Ginger Cream:
100g butter
1-1/2 cups icing sugar
2 tsp finely chopped crystallised ginger
Beat butter & icing sugar until smooth & pale.
Fold in chopped ginger.
