125g unsalted butter
1/4 cup sugar
2 eggs
2 cups flour
1-1/2 tsp baking powder
3/4 cup toasted cashew nuts, chopped
1 Tbs chopped fresh oregano
1 tsp cumin seeds
Beat butter & sugar to a cream. Beat in eggs one at a time, beating well until mixture is smooth.
Sift flour & baking powder & stir into creamed mixture with cashews, oregano & cumin seeds.
On lightly floured board make sausages of dough about 3cm in diameter. Place on greased tray about 5 cm apart.
Bake 160 degC 25 mins or until set & lightly browned.
Cool on rack 20 mins or until set & lightly browned.
Cool on rack 20 mins then cut into 1 cm slices.
Lay slices on tray & return to oven 5 minutes.
Turn over & cook further 5 mins, cool on rack.
