185g dates
250ml water
1 tsp baking soda
2 eggs
185g brown sugar
185g self raising flour
1/4 tsp vanilla essence
Cook dates in water until a jam consistency is reached.
Beat in the rest of the ingredients.
Spoon into a greased muffin tin to make individual servings & bake at 165 degC 25 mins. Serve drizzled with sauce, garnished with whipped cream & ice cream.
Sauce:
150g brown sugar
160ml cream
1/2 cup butter
1/2 tsp vanilla essence
Add brown sugar & butter to pan & warm over medium heat until butter melts. Add cream & vanilla, heat until sauce thickens.
