2 large orange-fleshed kumara, peeled & finely sliced
2 stalks celery, finely sliced
4 pork loin chops
1-2 Tbs fresh thyme leaves
550g can Watties Just Add Sweet Apricot Chicken Simmer Sauce
Layer kumara & celery in a greased lasagne-style dish.
Arrange the pork loin chops on top & scatter over the herbs. Pour over the sauce.
Bake 190 degC for 40-50 mins or until pork is crispy, golden & tender.
Lift pork chops from dish & thicken sauce (or stir in 125g Lite Creme Fraiche). Season with pepper if wished.
