600g boneless chicken breast or thigh fillets
1-2 Tbs oil
1 leek, washed & trimmed
2 stalks celery, sliced
2-3 rashers bacon, diced
550g can Watties Just Add Sweet Apricot Simmer Sauce
500g pkt Potato Pom Poms
Cut chicken meat into 3-4cm pieces. Heat oil in heavy based frypan, brown meat turning once, remove from pan & keep warm.
Cut leaks into 1 cm slices, fry in residue oil with celery & bacon until softened.
Stir in sauce with reserved chicken. Heat gently & pour into a deep lasagne style dish.
Arrange potato pom poms on top
Bake 170 degC for 30 mins until piping hot.
