3 tsp instant coffee powder
1 Tbs hot water
1 cup self raising flour, sifted
1/4 cup custard powder
3/4 cup brown sugar, firmly packed
1/3 cup milk
2 eggs
125 butter, softened
2 tsp vanilla
Dissolve coffee in water, add to large bowl of electric mixer with remaining ingredients, beat on low speed until just combined. Increase speed, beat until mixture is smooth & changed colour. Spread into greased & lined 20cm ring tin. Bake moderate oven 30 mins. Stand few minutes before turning on to wire rack.
Coffee Icing:
60g butter, melted
1-1/2 cups icing sugar, sifted
1 tsp honey
1 tsp vanilla
2 tsp instant coffee powder
2 Tbs water
Combine butter & 1/2 icing sugar, stir in honey, vanilla & combined instant coffee & hot water. Gradually stir in remaining icing sugar. Beat until thick.
