175 melted butter
1 cup ground almonds
6 egg whites, lightly beaten
1-1/2 cup icing sugar
1/2 cups flour
fruit (plums, raspberries, strawberries, apricots)
Preheat oven to 180 degC.
Grease 12 cup muffin pan.
Place all ingredients except fruit into bowl.
Stir until just combined.
Pour into pans about 1/2 full.
Top each with a piece of fruit.
Bake 25 mins.
Allow to stand in pans 5 minutes before turning out onto cooling rack.
