225-450g mixed nuts
1 cup sugar
1 tsp ground ginger
2 Tbs cinnamon
1/2 tsp nutmeg
1-1/2 tsp gournd cloves
1 tsp salt
1 egg white
1 Tbs water
Mix all dry ingredients, including sugar & sift several times to blend. Whisk egg white & water to even consistency. Place nuts in egg mixture, Shake off excess in colander. Put spices in container with lid, add nuts & shake. Place in singe layer on baking tray, keeping separate. Bake 250 degF 2 hours. Stir occasionally. Loosen & allow to cool.
