1/4 cup (60ml) cream
250g white chocolate melts
1 Tbs finely grated lemon rind
2 tsp lemon juice
1/2 cup coconut
3/4 shredded coconut (toasted)
Heat cream & chocolate in pan over low heat until melted.
Remove from heat & stir in rind, juice & coconut & leave to cool. Refrigerate until mixture is firm. Roll into balls & coat with toasted shredded coconut Keep in refrigerator.
