375ml can evaporated milk, chilled icy cold
1/2 cup finely chopped or pureed berries
1 tsp gelatin
4 Tbs castor sugar
1 Tbs lemon juice
2 Tbs hot water
Sprinkle gelatin on hot water, stirring briskly until thoroughly dissolved. Stir in sugar & fruit puree. Cool. Whip chilled evaporated milk until thick adding lemon juice. Gradually add cool gelatin mixture, whipping constantly. Pour into trays & freeze.
Variations:
Chocolate - Substitute 4 Tbs cocoa & 50g grated chocolate for pureed berries
Kiwifruit - Use 4 chopped kisifruit instead of berries
Mango or Peach - Use 1 cup pureed fruit in place of berries.
