25g butter
1/2 cup brown sugar
1 cup pineapple pieces, drained
75g butter
1/2 white sugar
1 egg
2-1/4 cups flour
1 Tbs baking powder
1/2 cup milk
1/2 cup pineapple juice
Put 25g butter in 20cm tin & melt. Sprinkle brown sugar over. Arrange pineapple on top. Beat 75g butter, sugar & egg till smooth. Sift in flour & baking powder. Mix with milk & pineapple juice. Pour over pineapple. Bake 180 degC (350 degF) 35-40 mins. Cool in tin 5 mins. Turn out upside down & serve.
