2 eggs
3/4 cup corn or soya oil
1/2 cup crushed pineapple & juice
1 cup mashed banana
1 cup sugar
1-1/2 cups flour
1 tsp baking soda
1/2 tsp cinnamon
3/4 tsp salt
Break eggs into bowl & beat until light & foamy. Add oil, pineapple, banana & sugar & beat just to combine. Fold in sifted dry ingredients - do not overmix. Spoon into well greased ring tin. Bake 200 degC 45 minutes. Leave to stand 5 minutes before turning out on to rack. When cold ice.
Cream Cheese Frosting:
Cream 1/4 cup cream cheese with 1/2 tsp finely grated lemon rind. Add 1/2 tsp vanilla essence & 1 cup icing sugar. Beath well.
Variations:
Replace crushed pineapple with stewed apple, feijoa, peaches or other fruit of similar texture.
Chop or mash fruit before measuring into cup.
