Fruit:
1 x 15oz can crushed pineapple
1 Tbs lemon juice
1 Tbs butter
1 Tbs brown sugar
2 tsp cornflour blended with a little juice
Topping:
1-1/2 cups self raising flour
1/2 cup sugar
2 Tbs butter
1 cup milk
1/4 cup brown sugar
2 Tbs water
Combine pineapple, lemon juice, brown sugar & butter. Add blended cornflour & stir until mixture boils & thickens. Put in ovenproof dish & keep hot.
Sift flour & sugar into bowl, rub in butter, add milk & mix quickly. Drop in spoonfuls on top of hot fruit. Bake 425 degF 15 minutes. Meanwhile bring brown sugar & water to boil, boil 1 minute. Pour over top & bake further 10 minutes.
