200g sweet short pastry
50g currants
50g sultanas
2 medium cooking apples (peeled & sliced)
2 Tbs sugar
2 Tbs flour
1/4 tsp cinnamon
Line flan tin with pastry. Reserve pastry trimmings. Mix sugar, flour & cinnamon. Fill flan with layers of apple, fruit & sugar mixture. Roll pastry timmings & cut into strips. Lattice across top of flan. Brush top with beaten egg. Bake 180 degC 40-45 minutes.
