4 cooking apples, peeled & grated
1/2 cup passionfruit pulp
1/2 cup sugar
1 tsp each ground allspice & cinnamon
8 sheets filo pastry
50g butter, melted
castor sugar for dusting
Heat oven to 170 degC. Squeeze liquid from apples. Combine with passionfruit, sugar & spices, mix well.
Lay out a sheet of filo & brush with melted butter, repeat until all sheets are used up.
Spoon filling onto pastry along one side leaving 2cm at each end. Fold ends in and roll up. Lay on baking tray with seam under. Brush with melted butter. Dust with sugar. Bake 30 minutes.
