Recipe Manager

Pastry:
125g butter
1/2 cup white sugar
1 egg
1-1/2 cups flour
2 Tbs cornflour
1 Tbs custard powder
1 tsp baking powder
Filling:
500g (approx 2 cups) stewed apple
1 tsp mixed spice
1/4 cup white sugar
Preheat oven to 200 degC
In whizz or large bowl cream butter & sugar.
Add egg & dry ingredients. Mix until a soft pastry is formed. Pat out or lightly roll.
Place 2/3 of pastry on base & up sides of 23-25cm pie plate.
Heat apple, stir in mixed spice sweeten to taste with sugar.
While hot & bubbling pour over pastry base.
Roughly roll out remaining pastry, place over hot filling. Bake 20-25 mins, turn oven down to 180 degC & cook further 10-15 mins. Cool in pie plate.
Serve warm & dust top with icing sugar.
