Recipe Manager

1 cup flour
1/2 cup self raising flour
1 Tbs cornflour
2 Tbs custard powder
1 Tbs apricot jam
1 Tbs castor sugar
125g butter
1 egg yolk
1 Tbs water
Sift dry ingredients, rub in butter. Add egg yolk & water to make firm dough, knead until smooth, refrigerate 30 mins. Line deep 21cm pie dish with pastry. Brush base with apricot jam. Spoon filling into base. Roll our pastry scraps, cut into strips, decorate in lattice pattern. Bake mod hot oven 30 mins.
Filling:
500g frozen berries (thawed), or fresh
1/4 cup sugar
1 tsp grated lemon rind
1 Tbs flour
Combine all ingredients just before required.
