500g cooked kumara
1 egg plus 1 egg white
1-1/2 cups fresh breadcrumbs
150 feta, crumbled
1 tsp sweet smoked paprika
3 Tbs flour
butter or oil fro frying
150g thick yoghurt
Mash kumara & mix with eggs, breadcrumbs, feta & paprika. Divide mixture into 12 & roll into balls. Roll in flour & flatten slightly. Fry in batches 4-5 minutes each side until golden & crisp. Serve with salsa & a dollop of yoghurt on top.
Salsa:
1 cucumber, peeled & seeded
1/4 cup pine buts, toasted
small handful basil leaves
1 lemon, zest & juice
1/4 cup olive oil
Cut cucumber into small chunks, mix with remaining ingredients, chill.
