Recipe Manager

1 onion, peeled & quartered
1 thumb ginger, peeled & chopped
2 cloves garlic, peeled
1/4 cup water
1 Tbs oil
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp turmeric
1/4 tsp cayenne pepper
1 Tbs tomato paste
1/2 Tbs lime juice
400g tin tomatoes, in juice
1/2 Tbs brown sugar
1 cauliflower cut into florets
1/2 cup water
salt to taste
150g beans, trimmed &halved
1/2 cup fresh coriander, chopped
Process onion, ginger, garlic & first measure of water to a paste. Heat oil in large pan & fry paste 3 minutes. Add spices & tomato paste & fry 2 minutes. Add lime juice, tomatoes, brown sugar, cauliflower, second measure of water & salt. Cover pan & simmer 8-10 minutes. Add beans & cook 2 minutes. Serve over rice garnished with fresh coriander or with chicken/meat dishes.
