500g new potatoes, unpeeled
2 Tbs coriander leaves, chopped
3 Tbs basil leaves, torn
3 Tbs mint leaves, foughly chopped
zest of one lemon
Dressing:
2 Tbs lemon juice
2 Tbs extra virgin olive oil
2 Tbs vegetable oil
2 Tbs wholegrain mustard
1 tsp brown sugar
salt & fresh ground black pepper
sea salt to garnish
Scrub potatoes, halving any if necessary. Cook until tender. Combine dressing ingredients, pour over hot potatoes & toss. Leave to marinate 15 minutes. Toss through herbs & lemon zest. Serve at room temp sprinkled with sea salt.
