2 cups grated courgettes
1/2 tsp salt
2 eggs, lightly beaten
1/4 cup feta cheese, crumbled
1/4 cup mint, chopped
2 Tbs flour
fresh ground pepper
2 Tbs olive oil & 2 tbs butter for frying.
Combine courgettes & salt in colander, drain 20 minites. Squeese & pat dry with paper towels. In bowl combine other ingredients. Heat oil & butter & cook spoonfuls of mixture until lightly browned on both sides.
