Recipe Manager

Parboil courgettes (whole) for 3 minutes. Slice lengthwise & scoop out pulp (reserve).
Saute: 1 finely chopped onion & crushed clove of garlic
Add:
juice & grated rind 1 lemon
pulp from courgettes
2 Tbs tomato concentrate
1 tsp basil
salt & pepper
60g ham or bacon, finely chopped
60g mushrooms, finely chopped
Fill courgettes & place in greased dish. Bake 15 mins 350 degF. Top with sour cream, parsley & paprika.
