1/4 cup finely chopped onion
1 clove fresh garlic
2 Tbs oil or butter
1/2 cup finely chopped fresh tomatoes
1/2 cup chicken stock
1 Tbs chopped parsley
1 tsp salt
1/4 tsp pepper
1 Tbs tomato paste
750g fresh broccoli, cooked
grated Parmesan cheese
Saute onions & garlic in oil or butter until lightly browned. Add tomatoes, chicken stock, parsley, saltb black pepper & tomato paste. Stir & cook until hot. Serve over cook broccoli. Sprinkle with grated Parmesan cheese.
