1/3 cup (50g) pine nuts
500g green beans
250g frozen peas
Mint Sauce
1 small onion, finely chopped
30g butter
2 Tbs white vinegar
1/3 cup chopped mint
3 tsp sugar
fresh ground black pepper
Toast pine nuts on oven tray moderate oven 5 minutes. Top & tail beans, chop diagonally, steam or boil with peas 7 minutes or until just tender, drain. Add mint sauce & pine nuts just before serving.
Mint Sauce:
Malt butter in pan, add onion, cook until soft. Add sugar, vinegar & pepper, bring to boil, remove from heat, add mint.
