400g pumpkin
1 onion, chopped finely
2 cloves garlic, crushed
1/2 tsp chopped root ginger
2 Tbs butter
1 tsp salt
1/2 tsp paprika
1/2 tsp turmeric
1 Tbs lemon juice
1/2 cup water
Peel & deseed pumpkin & chop into 3cm cubes. Melt butter in pan & add onion, garlic & ginger. Cook gently until onion is clear. Add salt, paprika, turmeric, lemon juice, water & pumpkin. Cover & simmer 10 mins until pumpkin is cooked.
