Recipe Manager

2 eggs
1/2 cup self raising flour
1/4-1/2 cup milk
2-3 Tbs oil for frying
plus either
2 cups chopped tomatoes & 2 Tbs chopped basil
or
2 cups corn kernels
or
2 cups grated courgettes
2 Tbs finely chopped mint
1 Tbs grated lemon rind
Separate eggs, beat whites until soft peaks form, add yolks & beat lightly. Fold in flour, vegetables & seasonings. Add milk to make soft batter. Heat oil in pan. Spoon in mixture to make patties.
