150g butter
3/4 cup brown sugar
2 Tbs golden syrup
3/4 cup coconut
1½ cup wholegrain oats
3/4 cup flour
1½ tsp baking powder
1½ tsp ground ginger
Melt butter, brown sugar and syrup in pan. Remove from heat and stir in coconut, oats, flour, baking powder & ginger. Mix until combined. Press into grease 20x30cm tin and bake at 180ºC for 15-20 mins. Mark into squares while still warm. Ice when cold with lemon icing.
